This 12th edition of Introductory Foods has been written and revised to give beginning college students an understanding of the basic fundamental principles of food preparation and to alert them to many innovations in science and technology related to foods. It is designed to be used in a first course in food preparation.

The organization of chapters in the book has changed from the 11th edition. The first four chapters contain introductory material about food choices, sensory analysis, economics, food safety, and regulations. The next five chapters provide a foundation in the principles of cooking. These first nine chapters contain basic principles that the student may refer to throughout the entire course. The brief discussion of carbohydrates, fats, and proteins in Chapter 9 may be used as a review for students who have had chemistry courses or as an introduction for those who have not studied chemistry. The remaining chapters are divided into eight sections: Fats, Frying, and Emulsions; Sweeteners, Crystalization, Starch, and Cereal Grains; Bakery Products; Vegetables, Fruits, and Salads; Dairy Products and Eggs; Meat, Poultry and Seafood; Beverages; and Food Preservation. The chapters in this book are independent, in that you may choose to present them in any order that best fits the structure of your own course. Cross-references to other chapters are indicated periodically in the written text.

This edition has been substantially updated to cover many recent developments in food safety and regulation, food consumption data, biotechnology, technological innovations in food processing and the discussion of new food products. This book is the second half of the study guide for the CCNA CyberOps certification (and exams). Like the one before it, it is supposed to offer something to learn and apply to your work, to spark your interest in order to study more details on the subject and, most importantly, to help you pass the certification exam. However, this book fails miserably in all aspects (the first one in the series was a bit more helpful in the exam part). Like the one before it, it is full of errors, fragments, scattered and repeating information, even marginal language. Having attended the exam, I can add that it is also a bad study guide, as the Q&A and the exam practices that it includes are much easier than the exam (and also full of errors). The two books could have easily been one book, as the second book is very small, it is largely consumed by tables and it repeats several subjects from the first book. I seems as if they split the books and the exams for monetary reasons. This book is the classic proof that being well educated (or well certified) does not mean that a writer can write a good book. In this book's case though, I doubt that the writer is even an educated engineer. There are many "gems" of "engineering" in this book, but I'll give just one extreme example: in pg. 205 it is stated: "Network throughput is typically measured in bandwidth and delays are identified as latency". I rest my case.

Good reference to learn about cyberattacks, methods and steps followed by the Incident Response Team. It's a good help for the test, but looks for other material online to pass the test.

A must have for anyone that's studying for this cert! Thank you Omar!!! =)

About the Author
Robert Martin Bone is a professor emeritus at the University of Saskatchewan. He has published numerous papers in scholarly publications and is a fellow of both the Royal Canadian Geographical Society and the Arctic Institute of North America. Dr. Bone holds a membership in a number of professional institutions, including the Canadian Association of Geographers and the Association of American Geographers. He is currently working with the Lac La Ronge Indian Band in northern Saskatchewan on issues of economic development, population growth and mobility, and health issues related to mobility and employment. Professor Bone has undertaken considerable field research in northern Canada and has visited northern Scandinavia and Siberia.
